Description

A delightful fusion of flavors, this casserole combines street corn with tender chicken for a comforting meal everyone will love.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups frozen corn
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1 cup crushed tortilla chips
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, frozen corn, cream of chicken soup, sour cream, shredded cheese, and taco seasoning. Mix until well combined.
  3. Season with salt and pepper to taste.
  4. Transfer the mixture to a greased 9×13 inch baking dish and spread it out evenly.
  5. Sprinkle crushed tortilla chips on top.
  6. Bake for 25-30 minutes, or until bubbly and golden brown.
  7. Remove from oven and let cool for a few minutes before garnishing with fresh cilantro, if desired. Serve warm.
