- 2 cups cooked chicken, shredded
- 2 cups frozen corn
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup crushed tortilla chips
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, frozen corn, cream of chicken soup, sour cream, shredded cheese, and taco seasoning. Mix until well combined.
- Season with salt and pepper to taste.
- Transfer the mixture to a greased 9×13 inch baking dish and spread it out evenly.
- Sprinkle crushed tortilla chips on top.
- Bake for 25-30 minutes, or until bubbly and golden brown.
- Remove from oven and let cool for a few minutes before garnishing with fresh cilantro, if desired. Serve warm.
