Description

A hearty one-pan meal that combines tender bell peppers, savory ground meat, and rice in a rich tomato sauce.


Ingredients

  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, chopped
  • 1 pound ground beef or turkey
  • 1 cup rice, uncooked
  • 2 cups bell peppers, chopped
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic and chopped onion until softened.
  3. Add the ground meat and cook until browned; drain excess fat if necessary.
  4. Stir in uncooked rice, chopped bell peppers, diced tomatoes, Italian seasoning, and salt and pepper.
  5. Pour the mixture into a greased casserole dish and spread evenly.
  6. Cover with foil and bake for 30-35 minutes until rice is tender.
  7. If using cheese, uncover, sprinkle over the top, and bake for an additional 5-10 minutes until melted.
  8. Let it cool for a few minutes before serving.

Notes

For added texture, sauté the bell peppers slightly before mixing them in. Leftovers can be stored in an airtight container for up to 4 days, or frozen for up to 3 months.
