Description

A delightful and moist pecan bread infused with rich flavors and topped with a luscious glaze, perfect for any occasion.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups chopped pecans
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract (for the glaze)

Instructions

  1. Preheat your oven to 350°F and generously grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Crack and add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and buttermilk until the mixture is silky smooth.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
  5. Gradually add the dry mixture to the wet mixture, stirring just until combined. Gently fold in the chopped pecans.
  6. Pour the batter into your prepared loaf pan, spreading it evenly.
  7. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.
  9. Whisk together melted butter, honey, and vanilla extract for the glaze, then brush it generously over the warm bread.
  10. Slice and serve warm, optionally with honey butter or powdered sugar.
