- 3 cups cooked and mashed sweet potatoes (about 2 pounds)
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs, well beaten
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
- 1 cup light brown sugar, packed
- 1/3 cup all-purpose flour
- 1 cup chopped pecans
- 1/3 cup unsalted butter, melted (for topping)
Instructions
- Cook the sweet potatoes until tender, then peel and mash until smooth.
- Preheat the oven to 350°F (175°C).
- Add granulated sugar, melted butter, beaten eggs, vanilla extract, and salt to the mashed sweet potatoes and blend until smooth.
- Grease a 9×13 inch baking dish and pour the sweet potato mixture into it, spreading evenly.
- In another bowl, combine brown sugar, flour, chopped pecans, and melted butter for the topping, mixing until crumbly.
- Sprinkle the pecan streusel topping over the sweet potato mixture.
- Bake for 30 minutes or until the topping is golden brown and casserole is heated through.
- Allow to cool briefly before serving warm.
