Description

Ingredients

  • 3 cups cooked and mashed sweet potatoes (about 2 pounds)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, well beaten
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1 cup light brown sugar, packed
  • 1/3 cup all-purpose flour
  • 1 cup chopped pecans
  • 1/3 cup unsalted butter, melted (for topping)

Instructions

  1. Cook the sweet potatoes until tender, then peel and mash until smooth.
  2. Preheat the oven to 350°F (175°C).
  3. Add granulated sugar, melted butter, beaten eggs, vanilla extract, and salt to the mashed sweet potatoes and blend until smooth.
  4. Grease a 9×13 inch baking dish and pour the sweet potato mixture into it, spreading evenly.
  5. In another bowl, combine brown sugar, flour, chopped pecans, and melted butter for the topping, mixing until crumbly.
  6. Sprinkle the pecan streusel topping over the sweet potato mixture.
  7. Bake for 30 minutes or until the topping is golden brown and casserole is heated through.
  8. Allow to cool briefly before serving warm.
