Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced sweet potatoes to the skillet. Cook until softened and golden, about 10-12 minutes.

- Add the bell peppers and garlic to the skillet and cook until fragrant, around 3 minutes.
- Season the hash with salt, pepper, and paprika, mixing well.
- Create wells in the hash and crack an egg into each. Cover to cook until whites are set and yolks remain runny, about 5-7 minutes.
- Serve warm, garnished with fresh herbs if desired.
