Ingredients

  • 4 large eggs

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potatoes to the skillet. Cook until softened and golden, about 10-12 minutes.
  3. Stir in the onions and sauté until translucent, about 5 minutes.
  4. Add the bell peppers and garlic to the skillet and cook until fragrant, around 3 minutes.
  5. Season the hash with salt, pepper, and paprika, mixing well.
  6. Create wells in the hash and crack an egg into each. Cover to cook until whites are set and yolks remain runny, about 5-7 minutes.
