- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1 tsp instant espresso powder or strong brewed coffee, reduced
- 8 oz mascarpone cheese, room temperature
- 1/4 cup powdered sugar
- 1 large egg yolk
- 1/2 tsp vanilla extract
- 1 tbsp brewed coffee or espresso, cooled
- 1/4 cup strong brewed coffee, cooled
- 1 tbsp granulated sugar (optional)
- 2 tsp unsweetened cocoa powder, for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, whisk together melted butter and sugar until smooth. Add the eggs and vanilla, whisking until thick and pale.
- Stir in the flour, cocoa powder, salt, and espresso powder, mixing just until combined.
- Pour the brownie batter into the prepared pan, spreading it evenly.
- In another bowl, beat the mascarpone cheese, powdered sugar, egg yolk, and 1/2 tsp vanilla extract along with the brewed coffee until smooth.
- Spoon the mascarpone mixture over the brownie batter and gently swirl with a knife to create a marbled effect.
- Bake in the preheated oven for 30–35 minutes, until the edges are set and a toothpick comes out with a few moist crumbs.
- Let cool for at least 30 minutes. While still warm, brush the top with brewed coffee mixed with sugar, if desired.
- Refrigerate for 1–2 hours before slicing to allow the mascarpone layer to set.
- Dust with cocoa powder and cut into squares. Serve chilled or at room temperature.
Notes
For a healthier twist, consider using low-sugar alternatives and gluten-free flour. You can substitute mascarpone with Greek yogurt and cream cheese for a lighter version.
