Description

Ingredients

  • 8 ounces pasta (your choice—penne, fusilli, or spaghetti)
  • 1 cup olives (black or green, sliced)
  • 1 cup feta cheese (crumbled)
  • 1/4 cup olive oil (extra virgin)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to the package instructions in plenty of water until al dente. Drain and let cool slightly.
  2. In a large bowl, combine the olives, feta cheese, olive oil, lemon juice, oregano, salt, and pepper.
  3. Add the cooked pasta to the bowl and toss until well combined.
  4. Taste and adjust seasoning as necessary.
  5. Serve garnished with fresh parsley, if desired.
