Description

A luscious loaf of bread made with ripe bananas, juicy crushed pineapple, and fragrant coconut flakes, perfect for snacks or dessert.


Ingredients

  • 3 ripe bananas, medium-sized
  • 1 cup crushed pineapple, well-drained
  • 1 cup coconut flakes, sweetened or unsweetened
  • 1/2 cup macadamia nuts, roughly chopped and toasted
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
  2. Mash the bananas in a mixing bowl until smooth and creamy.
  3. Stir in the drained crushed pineapple.
  4. In another bowl, whisk together the flour, baking powder, sugar, and coconut flakes.
  5. Gently fold the dry mixture into the wet ingredients until just combined.
  6. Fold in the chopped macadamia nuts.
  7. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
  8. Cool slightly before removing from the pan and slicing.
