- 3 ripe bananas, medium-sized
- 1 cup crushed pineapple, well-drained
- 1 cup coconut flakes, sweetened or unsweetened
- 1/2 cup macadamia nuts, roughly chopped and toasted
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
- Mash the bananas in a mixing bowl until smooth and creamy.
- Stir in the drained crushed pineapple.
- In another bowl, whisk together the flour, baking powder, sugar, and coconut flakes.
- Gently fold the dry mixture into the wet ingredients until just combined.
- Fold in the chopped macadamia nuts.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
- Cool slightly before removing from the pan and slicing.
