Description

A delightful, creamy vegan alternative to traditional eggnog, flavored with warming spices and naturally sweetened with medjool dates.


Ingredients

  • 3 cups unsweetened almond milk
  • 1/2 cup raw cashews (soaked)
  • 4 medjool dates (pitted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 pinch sea salt
  • Ice cubes (for serving)
  • Optional: 1–2 oz bourbon or rum per serving

Instructions

  1. Soak the cashews in hot water for 20–30 minutes or overnight in cold water. Drain and rinse.
  2. In a high-speed blender, combine almond milk, soaked cashews, medjool dates, vanilla extract, nutmeg, cinnamon, and sea salt.
  3. Blend on high speed for 1–2 minutes until smooth and creamy.
  4. Taste and adjust the sweetness or spices as needed.
  5. Transfer to a pitcher and chill in the fridge for at least one hour.
  6. Serve cold over ice, garnished with nutmeg and a cinnamon stick.
  7. For optional alcoholic twist, stir in bourbon or rum just before serving.
