Description

A delightful plant-based dish featuring zucchini and spinach wrapped with a creamy vegan cheese filling and topped with marinara sauce.


Ingredients

Scale
  • 4 medium zucchinis
  • 2 cups fresh spinach
  • 1 cup ricotta-style vegan cheese
  • 1 cup marinara sauce
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick).
  3. Sauté garlic and spinach in olive oil until wilted.
  4. In a bowl, mix the sautéed spinach with vegan cheese, nutritional yeast, oregano, salt, and pepper.
  5. Place a spoonful of the mixture on each zucchini strip and roll it up tightly.
  6. Spread a layer of marinara sauce on the bottom of a baking dish and place the zucchini rolls seam-side down.
  7. Top with remaining marinara sauce and drizzle with olive oil.
  8. Bake for 25-30 minutes until the sauce is bubbling and the zucchini is tender.
  9. Serve warm and enjoy!

Notes

Consider adding sun-dried tomatoes or olives to the filling for extra flavor. Use a mandoline for even zucchini strips.
