Ingredients

- 4 medium zucchinis
- 2 cups fresh spinach
- 1 cup ricotta-style vegan cheese
- 1 cup marinara sauce
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick).
- Sauté garlic and spinach in olive oil until wilted.
- In a bowl, mix the sautéed spinach with vegan cheese, nutritional yeast, oregano, salt, and pepper.
- Place a spoonful of the mixture on each zucchini strip and roll it up tightly.
- Spread a layer of marinara sauce on the bottom of a baking dish and place the zucchini rolls seam-side down.
- Top with remaining marinara sauce and drizzle with olive oil.
- Bake for 25-30 minutes until the sauce is bubbling and the zucchini is tender.
- Serve warm and enjoy!
Notes
Consider adding sun-dried tomatoes or olives to the filling for extra flavor. Use a mandoline for even zucchini strips.
