Ingredients

  • 3/4 cup brown sugar
  • 1/4 cup pure maple syrup
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 ounces white chocolate chips or melting wafers
  • Flaky sea salt, for garnish (optional)

Instructions

  1. Cream the butter and brown sugar together until light and fluffy.
  2. Add maple syrup, egg yolk, and vanilla extract; mix until fully combined.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Gradually mix dry ingredients into wet mixture until just combined.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Scoop dough into 1.5 tablespoon balls on the baking sheet, leaving room for spreading.
  8. Bake for 9–11 minutes, until edges are golden and centers are soft.
  9. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
  10. Melt white chocolate in a microwave-safe bowl, stirring until smooth.
  11. Dip half of each cookie in the melted white chocolate and return to parchment paper.
  12. Sprinkle with flaky sea salt and let the chocolate set before serving.
