- 4 medium Russet potatoes
- 4 cups vegetable oil (for frying)
- 2 tsp cayenne pepper (adjust to taste)
- 1 tsp garlic powder
- ½ cup freshly grated Parmesan cheese
- 2 green onions (chopped, for garnish)
- 2 tbsp hot sauce (your choice)
Instructions
- Wash and peel the Russet potatoes.
- Cut them into even strips.
- Soak the cut potatoes in cold water for 30 minutes.
- Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
- Fry the soaked potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.
- Remove fries and place on paper towels; season immediately with cayenne pepper, garlic powder, and salt.
- Serve fries on a platter, drizzled with hot sauce and topped with Parmesan cheese and green onions.
Notes
For extra crispiness, soak the potatoes longer and avoid overcrowding the fryer.
