- ½ cup (112 g) vegetable oil
- 1 ½ cups (300 g) granulated sugar
- 1 tablespoon vanilla extract
- 2 cups (256 g) all-purpose flour
- ½ cup (64 g) unsweetened cocoa powder
- 1 ½ teaspoon baking soda
- 1 teaspoon kosher salt
- 3 cups finely shredded zucchini (do not drain)
- 1 ¼ cups semi-sweet chocolate chunks
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch pan with parchment paper.
- In a large bowl, mix the vegetable oil, granulated sugar, and vanilla extract until smooth and creamy.
- Add the all-purpose flour, cocoa powder, baking soda, and kosher salt to the bowl. Stir until combined.
- Gently fold in the finely shredded zucchini by hand, then let the batter rest for about 5 minutes.
- Add in the semi-sweet chocolate chunks and stir again.
- Spread the batter into the prepared pan and bake for 25 to 35 minutes.
- Check for doneness using a toothpick; it should come out with moist crumbs attached.
