Description

Deliciously tender apple muffins topped with a crunchy crumb coating, perfect for breakfast or a sweet snack.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1/2 cup milk (any kind)
  • 1 tsp vanilla extract
  • 1 1/2 cups peeled and finely diced apples (Honeycrisp, Fuji, or Gala)
  • For the crumb topping:
  • 1/3 cup brown sugar, packed
  • 1/4 cup all-purpose flour
  • 1/2 tsp cinnamon
  • 3 tbsp unsalted butter (cold and cubed)
  • For the optional glaze:
  • 1/2 cup powdered sugar
  • 1–2 tsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease each cup.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk the eggs, oil, milk, and vanilla until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Fold in the diced apples gently.
  6. For the crumb topping, mix brown sugar, flour, and cinnamon in a small bowl. Add cold cubed butter and blend until coarse crumbs form. Chill the topping.
  7. Divide the muffin batter evenly among the cups, filling them about three-quarters full.
  8. Sprinkle the crumb topping over each muffin and lightly press down.
  9. Bake for 18–22 minutes until a toothpick inserted comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
  11. For optional glaze, mix powdered sugar, milk, and vanilla until smooth and drizzle over the cooled muffins.

Notes

These muffins freeze well! Store in an airtight container for up to 3 months.
