Deliciously tender apple muffins topped with a crunchy crumb coating, perfect for breakfast or a sweet snack.

- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 large eggs
- 1/2 cup vegetable oil or melted butter
- 1/2 cup milk (any kind)
- 1 tsp vanilla extract
- 1 1/2 cups peeled and finely diced apples (Honeycrisp, Fuji, or Gala)
- For the crumb topping:
- 1/3 cup brown sugar, packed
- 1/4 cup all-purpose flour
- 1/2 tsp cinnamon
- 3 tbsp unsalted butter (cold and cubed)
- For the optional glaze:
- 1/2 cup powdered sugar
- 1–2 tsp milk
- 1/4 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease each cup.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk the eggs, oil, milk, and vanilla until smooth.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Fold in the diced apples gently.
- For the crumb topping, mix brown sugar, flour, and cinnamon in a small bowl. Add cold cubed butter and blend until coarse crumbs form. Chill the topping.
- Divide the muffin batter evenly among the cups, filling them about three-quarters full.
- Sprinkle the crumb topping over each muffin and lightly press down.
- Bake for 18–22 minutes until a toothpick inserted comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
- For optional glaze, mix powdered sugar, milk, and vanilla until smooth and drizzle over the cooled muffins.
Notes
These muffins freeze well! Store in an airtight container for up to 3 months.
