- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ cups granulated sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- 3 large eggs (room temperature)
- 1 cup buttermilk
- ½ cup unsalted butter (melted)
- 1 cup fresh blackberries (or thawed frozen)
- 8 oz cream cheese (softened)
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
- In another bowl, beat the eggs and mix in the buttermilk and melted butter until smooth.
- Gently fold fresh blackberries into the wet mixture.
- Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
- While cakes cool, mix cream cheese and melted butter until creamy, then add powdered sugar and vanilla extract.
- Once cooled, frost between the layers and over the top of the cake. Serve and enjoy!
Notes
For extra flavor, add a tablespoon of blackberry puree to the frosting. Rotate the pans halfway through baking for even cooking.
