Description

A striking dessert featuring a moist chocolate cake infused with fresh blackberries and topped with creamy cream cheese frosting.


Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 3 large eggs (room temperature)
  • 1 cup buttermilk
  • ½ cup unsalted butter (melted)
  • 1 cup fresh blackberries (or thawed frozen)
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and mix in the buttermilk and melted butter until smooth.
  4. Gently fold fresh blackberries into the wet mixture.
  5. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean.
  6. While cakes cool, mix cream cheese and melted butter until creamy, then add powdered sugar and vanilla extract.
  7. Once cooled, frost between the layers and over the top of the cake. Serve and enjoy!

Notes

For extra flavor, add a tablespoon of blackberry puree to the frosting. Rotate the pans halfway through baking for even cooking.
