- 1 lb carrots, peeled and grated
- 1/2 cup raisins or sultanas
- 3 tablespoons extra virgin olive oil
- 1 1/2 tablespoons apple cider vinegar or lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- 1 small garlic clove, pressed or grated
- 1/4 teaspoon fine salt, plus more to taste

Instructions
- Peel and grate the carrots using a box grater or food processor.
- Combine the shredded carrots and raisins in a large salad bowl.
- In a jar, combine olive oil, vinegar or lemon juice, Dijon mustard, honey or maple syrup, garlic, salt, and pepper.
- Seal the jar and shake vigorously until well combined.
- Pour the dressing over the salad and mix well.
