Description

A vibrant and crunchy Carrot Raisin Salad that combines grated carrots and sweet raisins with a zesty dressing, making it a quick and nutritious dish.


Ingredients

  • 1 lb carrots, peeled and grated
  • 1/2 cup raisins or sultanas
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons apple cider vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, pressed or grated
  • 1/4 teaspoon fine salt, plus more to taste
  • 1/8 teaspoon ground black pepper

Instructions

  1. Peel and grate the carrots using a box grater or food processor.
  2. Combine the shredded carrots and raisins in a large salad bowl.
  3. In a jar, combine olive oil, vinegar or lemon juice, Dijon mustard, honey or maple syrup, garlic, salt, and pepper.
  4. Seal the jar and shake vigorously until well combined.
  5. Pour the dressing over the salad and mix well.
  6. Serve immediately or refrigerate for at least 30 minutes to enhance flavors.
