- 3/4 cup unsweetened cocoa powder
- 1/2 cup dark chocolate chips
- 1 tsp vanilla extract

- 1 tsp instant espresso powder (optional)
Instructions
- In a medium saucepan, combine the water, granulated sugar, cocoa powder, and salt. Whisk over medium heat until everything dissolves and the mixture begins simmering.
- Once simmering, add the dark chocolate chips and whisk until they melt into a smooth, glossy liquid.
- Allow the mixture to simmer for about 2-3 minutes. Remove from heat and stir in the vanilla extract. Blend until velvety smooth, and then let it cool.
- Refrigerate the mixture for at least 4 hours, allowing it to chill thoroughly.
- After chilling, churn the mixture in an ice cream maker for 20-25 minutes until it takes on a creamy texture.
- Freeze the sorbet in an airtight container for at least 2 hours before serving.
