A heartwarming chicken and dumpling soup that is comforting and easy to make, perfect for busy weeknights or lazy weekends.


Ingredients

  • 2 tbsp unsalted butter, melted
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt (adjust to taste)
  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp dried parsley
  • 3/4 cup milk
  • 2 tbsp melted unsalted butter

Instructions

  1. Melt 2 tablespoons of unsalted butter over medium heat in a large pot.
  2. Add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes until softened.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Pour in the chicken broth and add the shredded cooked chicken.
  5. Sprinkle in the dried thyme, parsley, black pepper, and salt. Simmer for 10 minutes.
  6. In a bowl, combine flour, baking powder, salt, and dried parsley for the dumplings.
  7. Add milk and melted butter to the dry ingredients and stir until a sticky dough forms.
  8. Drop spoonfuls of dumpling dough into the simmering soup.
  9. Cover and cook for 15 minutes without lifting the lid.
  10. Serve hot, garnished with fresh parsley.

Notes

For added flavor, consider a splash of lemon juice or frozen peas during cooking. Use homemade broth for richer taste.
