- 2 tbsp unsalted butter, melted
- 1 medium onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 8 cups chicken broth
- 2 cups shredded cooked chicken
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp ground black pepper
- 1/4 tsp salt (adjust to taste)
- 1 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp dried parsley
- 3/4 cup milk
- 2 tbsp melted unsalted butter
Instructions
- Melt 2 tablespoons of unsalted butter over medium heat in a large pot.
- Add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes until softened.
- Stir in the minced garlic and cook for 1 minute.
- Pour in the chicken broth and add the shredded cooked chicken.
- Sprinkle in the dried thyme, parsley, black pepper, and salt. Simmer for 10 minutes.
- In a bowl, combine flour, baking powder, salt, and dried parsley for the dumplings.
- Add milk and melted butter to the dry ingredients and stir until a sticky dough forms.
- Drop spoonfuls of dumpling dough into the simmering soup.
- Cover and cook for 15 minutes without lifting the lid.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, consider a splash of lemon juice or frozen peas during cooking. Use homemade broth for richer taste.
