Description

Light, airy, and fluffy Cottage Cheese Cloud Bread, a protein-packed treat that satisfies your cravings without the guilt.


Ingredients

  • 3 large eggs, separated
  • 1/2 cup cottage cheese (120 grams)
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon sweetener (erythritol or stevia)
  • 1/3 cup fresh blueberries (about 50 grams)
  • 1/2 teaspoon vanilla extract
  • Optional: A pinch of salt

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Beat the egg whites and cream of tartar until stiff glossy peaks form.
  3. In another bowl, mix the egg yolks, cottage cheese, sweetener, and vanilla extract until smooth.
  4. Carefully fold the whipped egg whites into the yolk mixture.
  5. Gently fold in fresh blueberries.
  6. Drop spoonfuls onto the prepared baking sheet.
  7. Bake for 25–30 minutes until golden and set. Let cool before serving.
