- 3 large eggs, separated
- 1/2 cup cottage cheese (120 grams)
- 1/4 teaspoon cream of tartar
- 1 tablespoon sweetener (erythritol or stevia)
- 1/3 cup fresh blueberries (about 50 grams)
- 1/2 teaspoon vanilla extract
- Optional: A pinch of salt
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Beat the egg whites and cream of tartar until stiff glossy peaks form.
- In another bowl, mix the egg yolks, cottage cheese, sweetener, and vanilla extract until smooth.
- Carefully fold the whipped egg whites into the yolk mixture.
- Gently fold in fresh blueberries.
- Drop spoonfuls onto the prepared baking sheet.
- Bake for 25–30 minutes until golden and set. Let cool before serving.
