Ingredients

  • 8 oz bow tie pasta
  • 1 lb Italian sausage
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Red pepper flakes (optional)

Instructions

  1. Cook the bow tie pasta according to the package instructions. Once al dente, drain and set aside.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Stir in the fresh spinach and cook until wilted.
  5. Pour in the heavy cream and bring to a gentle simmer, then stir in the grated Parmesan cheese until melted.
  6. Add the cooked pasta to the skillet, tossing to coat in the sauce. Season with salt, pepper, and red pepper flakes if desired.
  7. Serve hot, optionally garnished with extra Parmesan cheese.

Notes

Sautéing diced onions or bell peppers with the sausage can enhance flavor. Substitute different pasta shapes or use chicken/turkey sausage for a lighter option.
