- 1 lb Italian sausage
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
- Red pepper flakes (optional)
Instructions
- Cook the bow tie pasta according to the package instructions. Once al dente, drain and set aside.
- In a large skillet, heat a splash of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
- Add the minced garlic to the skillet and cook for an additional minute until fragrant.
- Stir in the fresh spinach and cook until wilted.
- Pour in the heavy cream and bring to a gentle simmer, then stir in the grated Parmesan cheese until melted.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. Season with salt, pepper, and red pepper flakes if desired.
- Serve hot, optionally garnished with extra Parmesan cheese.
Notes
Sautéing diced onions or bell peppers with the sausage can enhance flavor. Substitute different pasta shapes or use chicken/turkey sausage for a lighter option.
