A comforting dish combining tender chicken breasts with creamy garlic butter sauce over rotini pasta, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 8 oz rotini pasta
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Rotini: Bring a large pot of salted water to a boil. Add the rotini and cook until al dente; drain and set aside.
  2. Prepare the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, cooking for 6–7 minutes on each side until golden brown. Transfer to a plate and let rest before slicing.
  3. Sauté the Garlic: Lower heat to medium, add minced garlic to the skillet, and sauté for about 1 minute until fragrant.
  4. Make the Sauce: Add chicken broth to the skillet, bringing it to a simmer. Stir in heavy cream, Parmesan cheese, and Italian seasoning, whisking until smooth and creamy.
  5. Combine: Toss the cooked rotini into the sauce until well coated. Adjust consistency with more chicken broth if necessary.
  6. Plate the Chicken: Slice the rested chicken and place it on top of the creamy rotini.
  7. Garnish and Serve: Sprinkle chopped parsley over the dish and serve warm.

Notes

For an extra kick, add red pepper flakes to the sauce. Consider adding sautéed veggies for added nutrition.
