Description

A comforting and creamy vegetable soup made with vibrant mixed vegetables and aromatic herbs. Perfect for chilly evenings.


Ingredients

Scale
  • 2 tbsp olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (carrots, peas, corn, etc.)
  • 1 potato, peeled and diced
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil or butter over medium heat until hot.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the vegetable broth, mixed vegetables, and diced potato to the pot. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until the vegetables are tender.
  6. Puree the soup using a blender until smooth and creamy.
  7. Stir in the heavy cream or coconut milk, and season with salt and pepper to taste.
  8. Serve warm, garnished with fresh herbs if desired.

Notes
