Ingredients

- 2 tbsp olive oil or butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, peas, corn, etc.)
- 1 potato, peeled and diced
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat the olive oil or butter over medium heat until hot.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the vegetable broth, mixed vegetables, and diced potato to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until the vegetables are tender.
- Puree the soup using a blender until smooth and creamy.
- Stir in the heavy cream or coconut milk, and season with salt and pepper to taste.
- Serve warm, garnished with fresh herbs if desired.
