Description

A tantalizing twist on a classic favorite, these crispy buffalo cauliflower bites are perfect for snacking, appetizers, or as a fun main dish with a spicy kick.


Ingredients

  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt
  • 1 cup water
  • 1 cup breadcrumbs (panko preferred)
  • 1 cup buffalo sauce
  • 2 tablespoons olive oil
  • Optional: fresh parsley for garnish, celery sticks for serving, and ranch or blue cheese dressing for dipping

Instructions

  1. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt. Stir well.
  3. Gradually add the water, whisking until you achieve a smooth batter.
  4. Dip each cauliflower floret into the batter, allowing excess to drip off, then roll in the breadcrumbs.
  5. Arrange cauliflower bites in a single layer on the baking sheet and drizzle with olive oil.
  6. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.
  7. While baking, heat the buffalo sauce in a small saucepan over low heat.
  8. Transfer baked cauliflower to a bowl, pour hot buffalo sauce over, and toss to coat.
  9. Return the coated cauliflower to the baking sheet and bake for an additional 5-10 minutes.
  10. Serve immediately, garnished with parsley, along with celery sticks and dipping sauces.

Notes

Use panko breadcrumbs for extra crunch. Adjust cayenne pepper for desired heat level. Can be made ahead and baked later.
