Description

A vibrant and addictive salad featuring crispy rice, fresh vegetables, and a zesty lime dressing.


Ingredients

Scale
  • 1/2-inch knob fresh ginger or 1 tsp ginger paste
  • 1 clove garlic
  • 1/4 cup fish sauce
  • 1/4 cup + 2 tbsp avocado oil
  • 1/4 cup lime juice (approximately 3–4 limes)
  • 2 tbsp brown sugar
  • 1/2 tbsp chili crisp
  • 2 cups cooked jasmine rice
  • 2 tbsp avocado oil (for rice)
  • 2 tsp red curry paste
  • 2 tsp cornstarch (optional)
  • 1/2 English cucumber, thinly sliced
  • 1 shallot, thinly sliced or minced
  • 1 bunch cilantro, roughly chopped
  • 1 bunch mint, roughly chopped or torn
  • 1/2 cup chopped peanuts
  • Extra chili crisp to taste

Instructions

  1. In a blender, combine the ginger, garlic, fish sauce, avocado oil, lime juice, brown sugar, and chili crisp. Blend until smooth.
  2. In a bowl, toss the cooked jasmine rice with the avocado oil and red curry paste.
  3. If the rice doesn’t bind together well, sprinkle in cornstarch and mix with wet hands. Form loose chunks of the rice mixture and place them into an air fryer basket.
  4. Air fry at 400°F for about 7–9 minutes until crispy and golden.
  5. Once crispy, break the rice into pieces and let them cool slightly. In a large mixing bowl, integrate the cucumber, shallot, cilantro, mint, and peanuts.
  6. Add the crispy rice chunks to the veggie mix and pour in half of the rich dressing. Toss gently, allowing each ingredient to embrace the flavor. Adjust with more dressing and extra chili crisp to taste.

Notes

Ensure not to overbake the rice in the air fryer for the perfect texture.
