Description

A refreshing burst of crisp cucumbers and sweet honey-crisp apples, all brought together with a velvety maple dill dressing. Perfect for busy weekdays or holiday gatherings.

Ingredients

  • Fresh mini cucumbers
  • Honey crisp apples
  • Fresh lemon juice
  • Olive oil
  • Maple syrup
  • Fresh dill
  • Almond slivers
  • Sea salt

Instructions

  1. Wash and cube the apples into bite-sized pieces, leaving the skin on.
  2. Wash the mini cucumbers and slice them into quarter-inch rounds.
  3. In a separate bowl, combine lemon juice, olive oil, maple syrup, chopped fresh dill, and a pinch of sea salt. Whisk until slightly emulsified.
  4. Gently toss the cucumbers and apples in the dressing.
  5. Refrigerate for at least 30 minutes.
  6. Sprinkle almond slivers over the top before serving.

Notes

Best served fresh, but can be refrigerated for up to 1-2 days. Avoid letting the ingredients sit too long to prevent sogginess.
