Ingredients

  • 1 pint blueberries
  • 1/4 cup fresh mint, sliced
  • 1/2 cup sliced almonds
  • 3 tablespoons lemon juice

  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Slice cucumbers into bite-sized pieces.
  2. In a mixing bowl, combine cucumbers, blueberries, and sliced almonds.
  3. Stack the fresh mint leaves, roll them tightly, and slice into thin ribbons.
  4. Prepare the dressing by whisking together lemon juice, olive oil, honey, salt, and pepper in a small bowl.
