Ingredients

- 4 medium Cucumbers, thinly sliced
- 1/4 cup Rice Vinegar
- 2 tbsp Soy Sauce
- 1 tbsp Sesame Oil
- 1 tbsp Honey
- 2 cloves Garlic, minced
- 1 tsp Ginger, grated
- 1/2 tsp Red Pepper Flakes
- 2 tbsp Toasted Sesame Seeds
- 2 Green Onions, sliced
- 1/4 cup Cilantro, chopped
Instructions
- Thinly slice the cucumbers into even rounds and place them in a large mixing bowl.
- Whisk together the rice vinegar, soy sauce, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes in a separate bowl.
- Pour the dressing over the sliced cucumbers and toss to coat. Let sit for at least 10 minutes.
- Before serving, sprinkle with toasted sesame seeds, green onions, and cilantro. Toss gently and serve in your desired dish.
Notes
For optimal freshness, store in an airtight container and consume within two days. Make the dressing separately if preparing in advance.
