Description

A quick and flavorful side dish featuring fresh tomatoes marinated in a zesty garlic and herb mixture, perfect for summer gatherings.


Ingredients

  • 4 large ripe tomatoes
  • 2 garlic cloves, finely chopped
  • 1/4 small white onion, diced
  • 1/2 small bunch of fresh dill weed or basil, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Kosher salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Slice the tomatoes into approximately 1/3-inch thick slices.
  2. Finely chop the garlic cloves and onion.
  3. Chop the fresh dill or basil.
  4. In a small mixing bowl, combine garlic, onion, herbs, olive oil, balsamic vinegar, and honey.
  5. Layer the sliced tomatoes on a platter.
  6. Season with Kosher salt and ground black pepper.
  7. Spoon the marinade over the tomatoes.
  8. Cover and refrigerate for at least one hour before serving.

Notes

For best flavor, marinate the tomatoes for at least one hour, or prepare them a day in advance.
