Ingredients

- 4 large ripe tomatoes
- 2 garlic cloves, finely chopped
- 1/4 small white onion, diced
- 1/2 small bunch of fresh dill weed or basil, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Kosher salt, to taste
- Ground black pepper, to taste
Instructions
- Slice the tomatoes into approximately 1/3-inch thick slices.
- Finely chop the garlic cloves and onion.
- Chop the fresh dill or basil.
- In a small mixing bowl, combine garlic, onion, herbs, olive oil, balsamic vinegar, and honey.
- Layer the sliced tomatoes on a platter.
- Season with Kosher salt and ground black pepper.
- Spoon the marinade over the tomatoes.
- Cover and refrigerate for at least one hour before serving.

For best flavor, marinate the tomatoes for at least one hour, or prepare them a day in advance.
