Ingredients

- 1 (6 oz) box seasoned stuffing mix (about 3 cups dried bread cubes)
- 2 large eggs
- 1 cup chicken or vegetable broth
- 1/2 cup shredded cheddar cheese
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped onion
- 2 tbsp chopped fresh parsley or 1 tsp dried parsley
- Salt and pepper to taste
- Nonstick cooking spray or butter for greasing muffin tin
Instructions
- Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin generously.
- In a large bowl, combine the stuffing mix, chopped celery, chopped onion, and parsley.
- In a separate bowl, whisk together the eggs and broth until well-blended.
- Pour the egg mixture over the stuffing and stir until fully moistened.
- Fold in the shredded cheddar cheese.
- Divide the mixture evenly among the muffin cups, pressing gently.
- Bake for 25-30 minutes, or until the tops are golden and crisp.
- Cool slightly before removing from the tin. Serve warm or at room temperature.
Notes
These biscuits can be served as a side dish or an appetizer at gatherings. They can also be frozen for up to 3 months.
