Description

Comforting biscuits made with seasoned stuffing mix, perfect for family gatherings or busy weeknights.


Ingredients

  • 1 (6 oz) box seasoned stuffing mix (about 3 cups dried bread cubes)
  • 2 large eggs
  • 1 cup chicken or vegetable broth
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 2 tbsp chopped fresh parsley or 1 tsp dried parsley
  • Salt and pepper to taste
  • Nonstick cooking spray or butter for greasing muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin generously.
  2. In a large bowl, combine the stuffing mix, chopped celery, chopped onion, and parsley.
  3. In a separate bowl, whisk together the eggs and broth until well-blended.
  4. Pour the egg mixture over the stuffing and stir until fully moistened.
  5. Fold in the shredded cheddar cheese.
  6. Divide the mixture evenly among the muffin cups, pressing gently.
  7. Bake for 25-30 minutes, or until the tops are golden and crisp.
  8. Cool slightly before removing from the tin. Serve warm or at room temperature.

Notes

These biscuits can be served as a side dish or an appetizer at gatherings. They can also be frozen for up to 3 months.
