- 8 oz Penne Pasta
- 1 cup Feta Cheese, crumbled
- 1/2 cup Dried Cranberries
- 1/4 cup Olive Oil
- 1/4 cup Orange Juice, freshly squeezed
- 1 tsp Orange Zest
- Salt & Pepper to taste
- Mixed Greens (optional)
Instructions
- Cook the Penne Pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooled penne pasta, crumbled feta cheese, and dried cranberries.
- In a separate bowl, whisk together olive oil, orange juice, orange zest, salt, and pepper until emulsified.
- Pour the vinaigrette over the pasta mixture and gently toss to coat.
- Serve on a bed of mixed greens if desired.
