Description

Ingredients

  • 2 hearts romaine lettuce, chopped
  • 4–5 scallions, diced
  • 1 bunch fresh dill, chopped
  • 4 oz feta cheese, crumbled
  • ½ cup olive oil
  • 1 large lemon, juiced
  • ¼ tsp salt

Instructions

  1. Rinse the romaine lettuce under cold water and dry it with a salad spinner.
  2. Thinly slice the romaine into bite-sized pieces.
  3. Dice the scallions and chop the dill.
  4. In a small bowl, whisk together the olive oil, lemon juice, and salt until smooth.
  5. In a large bowl, combine the chopped romaine, dill, scallions, and feta.
  6. Pour the dressing over the salad and toss gently to combine.
