Description
This wrap combines grilled zucchini, creamy feta, and hearty chickpeas, drizzled with a refreshing herbed yogurt.
Ingredients

- 2 medium zucchinis, sliced lengthwise
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup crumbled feta cheese
- 4 whole wheat wraps or tortillas
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
- Preheat your grill or grill pan over medium-high heat.
- Toss zucchini strips with olive oil, garlic powder, salt, and pepper.
- Grill zucchini for about 4-5 minutes on each side until tender.
- Combine chickpeas and crumbled feta in a bowl.
- Prepare herbed yogurt by mixing Greek yogurt, dill, parsley, lemon juice, minced garlic, and salt.
- Spread herbed yogurt on a whole wheat wrap.
- Layer grilled zucchini and chickpea-feta mixture on top.
- Fold sides inward and roll the wrap tightly.
- Grill the assembled wraps for 2-3 minutes on each side if desired.
- Slice in half before serving.
Notes
Allow grilled zucchini to cool slightly before assembling to prevent sogginess.
