Description

This wrap combines grilled zucchini, creamy feta, and hearty chickpeas, drizzled with a refreshing herbed yogurt.


Ingredients

Scale
  • 2 medium zucchinis, sliced lengthwise
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup crumbled feta cheese
  • 4 whole wheat wraps or tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Instructions

  1. Preheat your grill or grill pan over medium-high heat.
  2. Toss zucchini strips with olive oil, garlic powder, salt, and pepper.
  3. Grill zucchini for about 4-5 minutes on each side until tender.
  4. Combine chickpeas and crumbled feta in a bowl.
  5. Prepare herbed yogurt by mixing Greek yogurt, dill, parsley, lemon juice, minced garlic, and salt.
  6. Spread herbed yogurt on a whole wheat wrap.
  7. Layer grilled zucchini and chickpea-feta mixture on top.
  8. Fold sides inward and roll the wrap tightly.
  9. Grill the assembled wraps for 2-3 minutes on each side if desired.
  10. Slice in half before serving.

Notes

Allow grilled zucchini to cool slightly before assembling to prevent sogginess.
