Description

Delightful homemade cake pops with a rich chocolate coating and a soft cake center, perfect for any celebration.


Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup (200 g.) granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp. pure vanilla extract
  • 2 cups (240 g.) all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. kosher salt
  • 1 cup whole milk
  • 12 Tbsp. unsalted butter, softened
  • 3 cups (345 g.) confectioners’ sugar
  • 3 Tbsp. heavy cream
  • 1 tsp. pure vanilla extract
  • Pinch of kosher salt
  • 5 cups white or semisweet chocolate chips
  • 5 Tbsp. coconut oil
  • Sprinkles, for decorating
  • 63 lollipop sticks

Instructions

  1. Preheat your oven to 350ยฐF and grease a 13 x 9 baking pan with cooking spray.
  2. Beat the softened butter and granulated sugar on medium-high speed until fluffy, about 3 to 4 minutes.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Whisk together flour, baking powder, and salt in a medium bowl until combined.
  5. Add half of the dry mixture to the egg mixture, then pour in the milk and combine. Fold in the remaining dry ingredients.
  6. Pour the batter into the prepared pan and bake for 20 to 25 minutes or until a toothpick comes out clean.
  7. Let the cake cool completely.
  8. In a large bowl, beat the softened unsalted butter and mix in the confectioners’ sugar, cream, vanilla, and salt to create buttercream frosting.
  9. Crumble the cooled cake into the frosting and mix until combined.
  10. Form tablespoon-sized balls from the mixture, place on a baking sheet, and refrigerate for about an hour until firm.
  11. Melt the chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second increments.
  12. Dip the tip of each lollipop stick into the melted chocolate, then insert into the cake balls.
  13. Dip the entire cake pop into the melted chocolate, allowing the excess to drip off and decorate with sprinkles.
  14. Refrigerate the pops until hardened, about 15 minutes.

Notes

Avoid overbaking the cake, and chill the cake balls well before dipping to prevent them from falling off the stick.
