- 1 cup (2 sticks) butter, softened
- 1 cup (200 g.) granulated sugar
- 3 large eggs, room temperature
- 2 tsp. pure vanilla extract
- 2 cups (240 g.) all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. kosher salt
- 1 cup whole milk
- 12 Tbsp. unsalted butter, softened
- 3 cups (345 g.) confectioners’ sugar
- 3 Tbsp. heavy cream
- 1 tsp. pure vanilla extract
- Pinch of kosher salt
- 5 cups white or semisweet chocolate chips
- 5 Tbsp. coconut oil
- Sprinkles, for decorating
- 63 lollipop sticks
Instructions
- Preheat your oven to 350ยฐF and grease a 13 x 9 baking pan with cooking spray.
- Beat the softened butter and granulated sugar on medium-high speed until fluffy, about 3 to 4 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Whisk together flour, baking powder, and salt in a medium bowl until combined.
- Add half of the dry mixture to the egg mixture, then pour in the milk and combine. Fold in the remaining dry ingredients.
- Pour the batter into the prepared pan and bake for 20 to 25 minutes or until a toothpick comes out clean.
- Let the cake cool completely.
- In a large bowl, beat the softened unsalted butter and mix in the confectioners’ sugar, cream, vanilla, and salt to create buttercream frosting.
- Crumble the cooled cake into the frosting and mix until combined.
- Form tablespoon-sized balls from the mixture, place on a baking sheet, and refrigerate for about an hour until firm.
- Melt the chocolate chips and coconut oil in a microwave-safe bowl, heating in 30-second increments.
- Dip the tip of each lollipop stick into the melted chocolate, then insert into the cake balls.
- Dip the entire cake pop into the melted chocolate, allowing the excess to drip off and decorate with sprinkles.
- Refrigerate the pops until hardened, about 15 minutes.
Notes
Avoid overbaking the cake, and chill the cake balls well before dipping to prevent them from falling off the stick.
