Description

A fluffy, moist cake sprinkled with cinnamon and studded with tender apple slices. This nostalgic dessert is quick to prepare and perfect for any gathering.


Ingredients

  • 3 eggs, lightly beaten
  • 2/3 cup milk, slightly warmed
  • 3 tbsp butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 apples (about 2 lbs), peeled, cored, and thinly sliced

Instructions

  1. Preheat the oven to 350°F (177°C) and line a 9×5″ loaf pan with parchment paper.
  2. In a large bowl, whisk together the eggs, warmed milk, melted butter, and vanilla extract.
  3. Sift in the flour, powdered sugar, cinnamon, baking powder, and salt, mixing until smooth.
  4. Prepare the apples by peeling, coring, and slicing them very thinly.
  5. Transfer the apple mixture into the prepared loaf pan, pressing down gently.
  6. Pour any remaining batter over the apples and spread it evenly.
  7. Bake for 50–60 minutes, or until golden brown and set in the center.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool for an additional 15 minutes.

Notes

Can be served a la mode or enjoyed as a snack. Feel free to substitute apples with pears or plums.
