A low-carb twist on the classic Reuben sandwich, featuring savory corned beef, melted Swiss cheese, and creamy dressing served over coleslaw.

- 1 bag coleslaw mix
- 1 pound corned beef, cut into strips
- 2–3 tbsp butter
- 1 cup Swiss cheese
- Scallions
- 1 cup mayonnaise
- 1/4 cup sugar-free ketchup
- 4 tsp horseradish
- 1 tsp hot sauce
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- A pinch of pepper
Instructions
- Heat a skillet over medium heat and melt the butter. Add the strips of corned beef and sauté for about 5 minutes until browned.
- Add the coleslaw mix to the skillet, cover, and steam for another 5 minutes.
- Stir the mixture gently and sprinkle Swiss cheese on top. Cover again and cook until melted, or broil for 1-2 minutes.
- In a mixing bowl, combine mayonnaise, sugar-free ketchup, horseradish, hot sauce, Worcestershire sauce, salt, and pepper to prepare the dressing.
- Serve the corned beef and coleslaw in bowls, drizzling the dressing on top and finishing with chopped scallions.
Notes
Ensure your skillet is preheated for the best sear on the beef. Taste and adjust the dressing seasonings as needed.
