Instructions
- Bring a pot of salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat until it shimmers.
- Add minced garlic and sauté for 1 minute, stirring constantly until fragrant.
- Incorporate the cubed chicken breast and cook for 5-7 minutes until browned and cooked through.
- Add mixed vegetables and stir-fry for 3-4 minutes until tender but still crisp.
- Mix in the cooked orzo and pour in the lemon juice, stirring to combine.
- Season with salt and pepper to taste.
- Garnish with freshly chopped parsley and serve warm.
