Ingredients

Instructions

  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat until it shimmers.
  3. Add minced garlic and sauté for 1 minute, stirring constantly until fragrant.
  4. Incorporate the cubed chicken breast and cook for 5-7 minutes until browned and cooked through.
  5. Add mixed vegetables and stir-fry for 3-4 minutes until tender but still crisp.
  6. Mix in the cooked orzo and pour in the lemon juice, stirring to combine.
  7. Season with salt and pepper to taste.
  8. Garnish with freshly chopped parsley and serve warm.
