Description

A comforting and indulgent macaroni and cheese dish, enhanced with sweet caramelized onions and tender chicken for a flavorful twist on a classic favorite.


Ingredients

  • 2 Yellow Onions, diced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Unsalted Butter
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 8 ounces Elbow Macaroni
  • 2 tablespoons All-Purpose Flour
  • 2 cups Whole Milk
  • 1 cup Beef Stock
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Ground Mustard
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Pepper
  • 1 cup Sharp Gruyère Cheese, shredded
  • 1 cup Mozzarella Cheese, shredded
  • 2 cups Rotisserie Chicken, shredded
  • 1 teaspoon Fresh Thyme

Instructions

  1. Heat olive oil and butter in a skillet over medium-high heat. Add diced onions, seasoning with sea salt and black pepper.
  2. Lower heat, cover, and cook onions slowly for 25-30 minutes, stirring occasionally.
  3. Once cooked, uncover and increase heat to medium, stirring frequently until onions are deep golden brown, then remove from heat.
  4. In a large saucepan, melt additional butter over medium heat, whisk in flour, and cook for 1-2 minutes to form a roux.
  5. Gradually whisk in warm milk and beef stock, heating and whisking for 3-5 minutes until thickened.
  6. Season the cheese sauce with kosher salt, garlic powder, ground mustard, and cayenne pepper.
  7. Stir in Gruyère and mozzarella cheeses until melted and smooth.
  8. Combine cooked elbow macaroni with cheese sauce and caramelized onions, then fold in shredded rotisserie chicken.
  9. Transfer to a greased baking dish, sprinkle with more Gruyère cheese, and bake at 350°F (175°C) for 12-15 minutes.
  10. Sprinkle with fresh thyme, season, let cool, and serve.

Notes

For a lighter version, consider using cauliflower pasta or dairy-free alternatives.
