Description

A creamy and delicious chicken dish with sun-dried tomatoes and fresh basil that is sure to impress.


Ingredients

  • 4 Boneless Skinless Chicken Breasts
  • 1 cup Heavy Cream
  • 1/2 cup Sun-Dried Tomatoes, chopped
  • 6 cloves Fresh Garlic, minced
  • 1/2 cup Parmesan Cheese, grated
  • 1/4 cup Fresh Basil, chopped
  • 1 cup Chicken Broth
  • 2 tablespoons Cornstarch
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper
  • 1 tablespoon Italian Seasoning
  • 1/4 teaspoon Red Pepper Flakes

Instructions

  1. Pat dry the chicken breasts and season with salt, garlic powder, onion powder, and black pepper.
  2. Heat butter and olive oil in a skillet over medium-high heat and sear the chicken for 3-4 minutes on each side.
  3. In a slow cooker, whisk together chicken broth and cornstarch, then add heavy cream, garlic, Italian seasoning, and red pepper flakes.
  4. Transfer the seared chicken to the slow cooker, top with sun-dried tomatoes, and let cook on low for 6-7 hours.
  5. Add Parmesan cheese in the last 30 minutes of cooking and let it melt into the sauce.
  6. Remove the chicken, let it rest for 5-10 minutes, and serve.

Notes

For a lighter version, substitute low-fat cream or almond milk and add fresh veggies for extra nutrition.
