- 4 Boneless Skinless Chicken Breasts
- 1 cup Heavy Cream
- 1/2 cup Sun-Dried Tomatoes, chopped
- 6 cloves Fresh Garlic, minced
- 1/2 cup Parmesan Cheese, grated
- 1/4 cup Fresh Basil, chopped
- 1 cup Chicken Broth
- 2 tablespoons Cornstarch
- 2 tablespoons Butter
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1/2 teaspoon Black Pepper
- 1 tablespoon Italian Seasoning
- 1/4 teaspoon Red Pepper Flakes
Instructions
- Pat dry the chicken breasts and season with salt, garlic powder, onion powder, and black pepper.
- Heat butter and olive oil in a skillet over medium-high heat and sear the chicken for 3-4 minutes on each side.
- In a slow cooker, whisk together chicken broth and cornstarch, then add heavy cream, garlic, Italian seasoning, and red pepper flakes.
- Transfer the seared chicken to the slow cooker, top with sun-dried tomatoes, and let cook on low for 6-7 hours.
- Add Parmesan cheese in the last 30 minutes of cooking and let it melt into the sauce.
- Remove the chicken, let it rest for 5-10 minutes, and serve.
Notes
For a lighter version, substitute low-fat cream or almond milk and add fresh veggies for extra nutrition.
