Description
Delightful Neapolitan Ice Cream Sandwiches combining chocolate, vanilla, and strawberry flavors, perfect for warm days and family gatherings.

- 1 1/2 cups (195g) all-purpose flour
- 3 tbsp (22g) natural unsweetened cocoa powder
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (112g) unsalted butter, at room temperature
- 1 cup (207g) sugar
- 1 large egg
- 1/2 cup (120ml) milk
- 1/2 gallon vanilla ice cream (you will only use half of it)
- 1/2 gallon strawberry ice cream (you will only use half of it)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
- In another bowl, beat the softened butter and sugar together until light and fluffy.
- Add the egg and milk to the butter-sugar mixture, mixing until fully incorporated and smooth.
- Gradually fold in the dry ingredients to the wet mixture.
- Using a tablespoon, scoop out portions of dough and place them onto the prepared baking sheets.
- Bake for 10-12 minutes or until the edges are set and the cookies appear slightly underbaked in the center.
- Allow the cookies to cool on a wire rack completely.
- Once cooled, scoop vanilla ice cream onto one cookie, followed by strawberry ice cream, and close with another cookie.
- Repeat with the remaining cookies.
Notes
Allow cookies to cool completely to maintain structure. Feel free to use different ice cream flavors.
