Description

Ingredients

  • 1 can (20 oz) pineapple rings, drained
  • 10 maraschino cherries
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Sprinkle brown sugar evenly over the bottom of the pan.
  3. Arrange the pineapple rings over the brown sugar and place one cherry in the center of each ring.
  4. Cream together the softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  6. Whisk together the flour and baking powder and gradually combine with the wet ingredients until smooth.
  7. Pour the batter over the pineapples, spreading it evenly.
  8. Bake for 30-35 minutes until golden brown and a toothpick inserted comes out clean.
  9. Cool for 10 minutes before inverting the cake onto a serving plate.

Notes
