- 1/2 cup finely chopped pistachios
- 1/4 teaspoon salt
- 1/4 teaspoon almond extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy (about 3-4 minutes).
- Mix in vanilla extract and almond extract (if using) until well combined.
- In a separate bowl, whisk together all-purpose flour and salt, then gradually add to the butter mixture, mixing until just incorporated.
- Fold in finely chopped pistachios until evenly distributed.
- Form the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet with space between each ball.
- Bake for 12-15 minutes until the bottoms are lightly golden and tops feel firm.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Dust cooled cookies generously with powdered sugar.
Notes
For best results, use room temperature butter and consider chilling the dough if it’s too soft.
