Ingredients

  • 1/2 cup unsalted butter (1 stick)
  • 3 oz. chocolate (60% cacao), chopped
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. espresso powder
  • 1/2 tsp. kosher salt
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 8 oz. cream cheese, room temperature
  • 1 large egg
  • 1/2 cup canned pumpkin puree
  • 1/3 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tsp. pumpkin pie spice
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. kosher salt
  • Unsweetened cocoa powder, for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 metal baking pan with cooking spray and line with foil for easy removal.
  3. Melt the butter in a small pot over medium heat, then remove from heat.
  4. Stir in chopped chocolate until smooth.
  5. Mix in pure vanilla extract, espresso powder, and kosher salt.
  6. In a separate bowl, whisk together granulated sugar and light brown sugar.
  7. Combine the chocolate mixture with sugars, whisking until smooth.
  8. Add eggs one at a time, whisking well after each addition.
  9. Gently fold in flour and cocoa powder until combined, being careful not to overmix.
  10. In another bowl, beat cream cheese on medium-high speed until smooth.
  11. Add remaining cheesecake ingredients and blend until combined.
  12. Pour brownie batter into the pan, then top with cheesecake batter without mixing.
  13. Bake for 40 to 50 minutes until set, and a toothpick comes out with a few crumbs.
  14. Allow to cool before slicing, and dust with cocoa powder if desired.

Notes

Can be frozen for up to three months. Thaw in the fridge overnight for best results.
