- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 cup creamy peanut butter
- 12 mini Reeseโs Peanut Butter Cups
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and line a cupcake pan with liners.
- In a medium bowl, mix together the flour, cocoa powder, baking powder, and granulated sugar until combined.
- In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients to keep the cupcakes light.
- Fill each liner halfway with batter, place a mini Reeseโs cup upside down, then top with more batter.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Allow to cool, then beat together butter, powdered sugar, and peanut butter for the frosting.
- Frost the cooled cupcakes generously and enjoy!
