Description

Delightful cupcakes combining rich peanut butter and velvety chocolate, each hiding a mini Reese’s cup inside.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/2 cup creamy peanut butter
  • 12 mini Reeseโ€™s Peanut Butter Cups

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a cupcake pan with liners.
  2. In a medium bowl, mix together the flour, cocoa powder, baking powder, and granulated sugar until combined.
  3. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients to keep the cupcakes light.
  5. Fill each liner halfway with batter, place a mini Reeseโ€™s cup upside down, then top with more batter.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
  7. Allow to cool, then beat together butter, powdered sugar, and peanut butter for the frosting.
  8. Frost the cooled cupcakes generously and enjoy!

Notes

Avoid overbaking to prevent dry cupcakes. Use gentle folding to maintain texture.
