Description

A comforting and hearty soup combining tender rotisserie chicken, earthy mushrooms, and colorful vegetables in a rich broth.


Ingredients

  • 1 Rotisserie Chicken, shredded
  • 8 oz Mushrooms, sliced
  • 1 Onion, chopped
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 4 cups Chicken Broth
  • 2 cups Water
  • 2 Garlic cloves, minced
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables have softened, about 5-7 minutes.
  2. Add the sliced mushrooms to the pot, stirring for another 5 minutes until they begin to brown.
  3. Pour in the chicken broth and water, stirring well. Increase the heat to bring to a gentle boil.
  4. Once boiling, stir in the shredded rotisserie chicken.
  5. Sprinkle in salt and pepper to taste.
  6. Reduce the heat to a simmer and cook for 15-20 minutes.
  7. Garnish with fresh herbs before serving.

Notes

For a creamer texture, blend part of the soup and mix it back in. You can also customize the vegetables according to preference.
