- 1 Rotisserie Chicken, shredded
- 8 oz Mushrooms, sliced
- 1 Onion, chopped
- 2 Carrots, diced
- 2 Celery stalks, diced
- 4 cups Chicken Broth
- 2 cups Water
- 2 Garlic cloves, minced
- Salt and pepper to taste
- Fresh herbs (like thyme or parsley) for garnish
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables have softened, about 5-7 minutes.
- Add the sliced mushrooms to the pot, stirring for another 5 minutes until they begin to brown.
- Pour in the chicken broth and water, stirring well. Increase the heat to bring to a gentle boil.
- Once boiling, stir in the shredded rotisserie chicken.
- Sprinkle in salt and pepper to taste.
- Reduce the heat to a simmer and cook for 15-20 minutes.
- Garnish with fresh herbs before serving.
Notes
For a creamer texture, blend part of the soup and mix it back in. You can also customize the vegetables according to preference.
