- 3 cloves garlic, minced
- 2 green onions, chopped
- 1 shallot, finely diced
- 1/4 cup fresh parsley, chopped
- 2 teaspoons lemon juice, freshly squeezed
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon sea salt
- 2 large eggs, beaten
- 2 cans (15 ounces each) pink salmon, drained
- 1/2 cup panko breadcrumbs
- Oil for light frying
Instructions
- In a blender or food processor, combine garlic, green onions, shallot, parsley, lemon juice, Old Bay seasoning, sea salt, and beaten eggs. Blend for 30 to 45 seconds until finely broken down.
- Open the canned salmon, remove pin bones or skin, and flake into a large bowl.
- Stir panko breadcrumbs and the blended onion mixture into the flaked salmon until well combined.
- Warm a skillet over medium-high heat and drizzle with oil. Form about 1/3 cup of the salmon mixture into a patty.
- Place patties in the skillet, cooking for 3 minutes until golden brown on one side. Flip and cook for an additional 2 to 3 minutes.
- Transfer the cooked patties to a paper towel-lined plate to drain excess oil. Serve warm with a dipping sauce.
Notes
For a healthier option, you can bake the patties at 375°F for 20-25 minutes, flipping halfway through.
