Description

Crispy on the outside and tender inside, these salmon patties are a nostalgic and delicious treat perfect for any occasion.


Ingredients

  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 1 shallot, finely diced
  • 1/4 cup fresh parsley, chopped
  • 2 teaspoons lemon juice, freshly squeezed
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon sea salt
  • 2 large eggs, beaten
  • 2 cans (15 ounces each) pink salmon, drained
  • 1/2 cup panko breadcrumbs
  • Oil for light frying

Instructions

  1. In a blender or food processor, combine garlic, green onions, shallot, parsley, lemon juice, Old Bay seasoning, sea salt, and beaten eggs. Blend for 30 to 45 seconds until finely broken down.
  2. Open the canned salmon, remove pin bones or skin, and flake into a large bowl.
  3. Stir panko breadcrumbs and the blended onion mixture into the flaked salmon until well combined.
  4. Warm a skillet over medium-high heat and drizzle with oil. Form about 1/3 cup of the salmon mixture into a patty.
  5. Place patties in the skillet, cooking for 3 minutes until golden brown on one side. Flip and cook for an additional 2 to 3 minutes.
  6. Transfer the cooked patties to a paper towel-lined plate to drain excess oil. Serve warm with a dipping sauce.

Notes

For a healthier option, you can bake the patties at 375°F for 20-25 minutes, flipping halfway through.
