Description

Indulgent cookies combining honey’s sweetness with the crunch of pistachios.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/3 cup light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup shelled roasted pistachios, roughly chopped
  • 2 tbsp extra chopped pistachios (for garnish)
  • Flaky sea salt (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, beat together butter, honey, and brown sugar until smooth and creamy (2-3 minutes).
  3. Add in the egg and vanilla extract, mixing until incorporated.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined, then fold in the chopped pistachios.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, flatten slightly, and sprinkle with extra pistachios and flaky sea salt.
  7. Bake for 9–11 minutes until edges are golden. Let cool for 5 minutes on the pan before transferring to a wire rack.
  8. Allow cookies to cool completely for the ideal chewy texture.

Notes

Serve with tea, coffee, or vanilla ice cream. Store in an airtight container for up to a week.
