- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 1/3 cup light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup shelled roasted pistachios, roughly chopped
- 2 tbsp extra chopped pistachios (for garnish)
- Flaky sea salt (for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a large bowl, beat together butter, honey, and brown sugar until smooth and creamy (2-3 minutes).
- Add in the egg and vanilla extract, mixing until incorporated.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined, then fold in the chopped pistachios.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, flatten slightly, and sprinkle with extra pistachios and flaky sea salt.
- Bake for 9–11 minutes until edges are golden. Let cool for 5 minutes on the pan before transferring to a wire rack.
- Allow cookies to cool completely for the ideal chewy texture.
Notes
Serve with tea, coffee, or vanilla ice cream. Store in an airtight container for up to a week.
