  • 3 large eggs

  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large mixing bowl, combine flour, baking powder, and salt.
  3. In a separate bowl, whisk together eggs, milk, and olive oil.
  4. Slowly pour the wet mixture into the dry ingredients, folding gently until just combined.
  5. Fold in crumbled sausage, shredded cheese, and optional vegetables.
  6. Divide the batter evenly into the greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until golden and a toothpick comes out clean.
