- 1 French baguette or Italian ciabatta loaf
- 2 cups ripe tomatoes, diced
- 2 cloves fresh garlic, minced
- 1/4 cup fresh basil leaves, finely chopped
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic glaze
- Optional: grated Parmesan cheese
Instructions
- Preheat your grill to medium heat.
- In a medium mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, sea salt, black pepper, and balsamic glaze. Stir gently and allow to marinate for 15-20 minutes.
- Brush each side of the bread with olive oil.
- Place the oiled bread slices on the grill and grill each side for 2-4 minutes until golden-brown.
- Remove the bread from the grill and allow to cool slightly. Top each slice generously with the tomato mixture.
- Sprinkle with grated Parmesan cheese if desired.
- Drizzle additional balsamic glaze over the bruschetta before serving.
- Serve immediately while warm.
Notes
For best flavor, ensure to use ripe tomatoes and fresh basil. Marinate the topping for a longer time if possible.
