Description

A delightful blend of grilled bread topped with fresh tomatoes, garlic, basil, and a drizzle of balsamic glaze, perfect as an appetizer or light meal.


Ingredients

  • 1 French baguette or Italian ciabatta loaf
  • 2 cups ripe tomatoes, diced
  • 2 cloves fresh garlic, minced
  • 1/4 cup fresh basil leaves, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic glaze
  • Optional: grated Parmesan cheese

Instructions

  1. Preheat your grill to medium heat.
  2. In a medium mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, olive oil, sea salt, black pepper, and balsamic glaze. Stir gently and allow to marinate for 15-20 minutes.
  3. Brush each side of the bread with olive oil.
  4. Place the oiled bread slices on the grill and grill each side for 2-4 minutes until golden-brown.
  5. Remove the bread from the grill and allow to cool slightly. Top each slice generously with the tomato mixture.
  6. Sprinkle with grated Parmesan cheese if desired.
  7. Drizzle additional balsamic glaze over the bruschetta before serving.
  8. Serve immediately while warm.

For best flavor, ensure to use ripe tomatoes and fresh basil. Marinate the topping for a longer time if possible.
