- 60 g Sourdough Starter
- 350 g Water
- 500 g Bread Flour
- 10 g Kosher Salt
- 100 g Raisins
- 50 g Sugar
- 8 g Cinnamon
Instructions
- In a large bowl, combine the warm water with the sourdough starter. Stir until well combined.
- Gradually incorporate the flour and salt into the mixture until it appears shaggy.
- Cover the bowl with a damp towel and allow the dough to rest for 1 hour.
- After an hour, fold in the cinnamon, sugar, and raisins until evenly distributed.
- Cover the bowl again and let the dough rise for 8-10 hours or until it doubles in size.
- Turn the dough onto a floured surface, shape it into a ball, and create a smooth top.
- Place the dough seam side up in a flour-dusted bowl lined with a kitchen towel and refrigerate overnight.
- Preheat your oven to 450°F. Place the dough seam side down on parchment paper and make a single slice on top.
- Transfer it to a Dutch oven and bake covered for 20 minutes, then remove the lid and bake for an additional 35 minutes until golden brown.
- Let the bread cool completely before slicing.
Notes
Slice and freeze leftovers to keep fresh. Reheat in a toaster for a warm treat.
