Description

A light and indulgent salad featuring fresh spinach, juicy strawberries, crunchy candied pecans, and creamy feta, all brought together with a balsamic vinaigrette.


Ingredients

Scale
  • 1/4 cup balsamic vinegar
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 3/4 cup candied pecans
  • 1/2 small red onion, thinly sliced
  • 10 oz fresh baby spinach
  • 2 cups strawberries, cut into medium-sized pieces
  • 3/4 cup feta cheese, crumbled

Instructions

  1. In a small bowl or jar, add the balsamic vinegar, honey, and olive oil. Whisk or shake until well blended.
  2. In a large bowl, add the fresh baby spinach, strawberries, feta, and red onion. Toss lightly to combine.
  3. Sprinkle in the candied pecans.
  4. Just before serving, pour the dressing over the salad and gently mix until all ingredients are coated.
  5. Serve and enjoy!
